They're gone. The house is trashed and smells like fog machine. I slept about an hour last night and three hours the night before. I've spent over $400.00 on various accessories and BS. Time for a nap.

Ok, so last week the producer Alan, suggests that we decorate for Halloween and even dress the kids up in costumes. I blew off the costumes, but did fish the boxes of decorations out of the basement. Once they saw that they had some props to work with, it was all over.

Keep in mind, Emeril's Halloween special is pretty over the top. It's serious about being campy, and is always a big hit. Alan and Mark from The Food Network were professional and polite. I can't help but feel nervous that this is going to turn out silly. I trust that when the put it together, it will fit into the show.

At this point, I'm starting to panic just a little. They had me pour the bread from a skull, into the food processor. Then in another shot, hold another skull on top of the machine. All I can hear in my head is "... in the context of the show"

UPDATE We booked the date for this Friday August 26th. I'm not sure yet when the show will air, but it is typically the last two weeks of October. I will be in studio during the taping and I am hoping to work out the whole family going to New York.

First Game (Pre-Season). Aidan's team won 21-7. Aidan played Left Guard, Right End and Safety. He played both ways, and was on the sideline for about 4 minutes. It was 95 and humid, perfect football weather.

The winning recipe:

Shrunken Heads (Side Dish)
Serves 6
Prep Time 20 Minutes
Total Time 1 Hours 50 Minutes

6 Medium Granny Smith Apples
1 Cup Fresh Bread Crumbs
2 Tablespoons Unsalted Butter at Room Temperature
3 Slices Bacon
½ Small Onion, Fine Dice
1 Clove Garlic, Minced
2 Tablespoons Freshly Grated Parmesan Cheese
2 Teaspoons Whole Grain Mustard
3 Tablespoons Balsamic Vinegar

Slice bacon into small cubes. Sauté’ over medium heat until brown and crispy. Remove bacon and discard all but 1 Tablespoon of drippings. Sauté’ onions in drippings about 3 minutes and add garlic. Cook until onion is translucent and beginning to brown. Do not allow garlic to brown, reduce heat if necessary. Add bread crumbs and cooked bacon and toss. Remove from heat and allow to cool in pan. With melon baler, remove core from apple starting at the top (stem end). Only dig about halfway down into the apple to remove the core, do not go all the way through the apple and out the opposite end. You should now have a well in the apple about 1 inch wide and 2 inches deep (depending on the size of your apple). With a paring knife carefully carve eyes, nose and mouth in side of the apple creating a face.

To cooled filling add Parmesan Cheese, butter, mustard, and 1 tablespoon of balsamic vinegar. Stuff apples with filling and place in a baking dish so that they do not touch. For best results have carved faces toward the outside of the dish. Brush and drizzle the remaining 2 tablespoons of balsamic vinegar on the outside of the apples, especially any cut features of the face.

Tip:
Use Jack-o-Lantern tools, melon baler, and bamboo skewers to create features of the face.

Black Widow Cakes
Serves 6
Preparation Time 10 Minutes

6 Chocolate Covered Cake Treats (such as “Ding Dongs” or “Swiss Cake Roll”
24 Black Pipe Cleaners
12 Candy Corn (or similar hard candy)

Fold each pipe cleaner in half, forming a “V”. Cut candy corn in half crosswise and reserve the small triangle you created. Unwrap cake and insert pointed end of 4 pipe cleaners into bottom of cake one at a time, forming legs. Bend legs again to create interesting or menacing poses. Insert two candy triangles into one side of the top of the cake to create eyes.

Other ideas: Use two more candy corn to form an hourglass on the top of the cake. The hourglass is the only feature on a black widow spider.

Lumberjack Fingers (Dessert)
Serves 6
Preparation Time 20 Minutes

6 Cake Treats (such as “Twinkie”)
3 Pretzel Rods
1 Cup Prepared White Frosting
Assorted Food Coloring (liquid or paste)
1 Small Bag Plain Potato Chips
¼ Cup Strawberry or Raspberry Preserves

Place prepared frosting in mixing bowl and add food coloring to create a “flesh” color. Mix thoroughly to blend color and make frosting very smooth and spreadable. Unwrap cakes and turn cake over. Carefully cut a lengthwise slit in bottom of cake in the center starting about one inch from one end and stopping about one inch from the other end. Break pretzel rod approximately in half, sized to fit in the slit you created. Carefully stuff pretzel rod into the cake using the slit you cut, positioning it in the center of the cake. Cut one of the rounded ends or “tips” off of the cake (about ½ inch crosswise across one of the rounded ends of the cake) forming a finger shape. Discard the “tip”. Spread the frosting over the top and sides of the cake leaving the cut edge and bottom unfrosted. Spread preserves on the cut end of the “finger” for the wound. Pour potato chips into a bowl and choose one chip for each finger to use as the finger nail. Carefully put chip on rounded end of the finger to form the finger nail.

Tips:
Add black food color to the remaining frosting to make a darker flesh color. Use this darker frosting and a toothpick to make details such as creases in the fingers.

Add a jagged, broken piece of pretzel rod sticking out of the preserves about a half of an inch to imitate bone.

When eaten, the pretzel makes the crunch of bone in the finger.


Roasted Brains Omelet
Serves Four
Preparation Time 20 Minutes
Foil
Non Stick Spray
8 Eggs
2 Tablespoons Butter
2 Tablespoons Milk
Pinch of Salt and Pepper
Tomato Ketchup

Form four molds from foil in the shape of the top half of a brain about the size of a baseball and three inches deep. Use your fist to help form the shape. Be sure to create a crease down the middle and plenty of wrinkles. Spray the molds liberally with non stick spray and set aside. Simmer 1 quart of water in a tea kettle or sauce pan. Place molds in a baking dish close to the stove. Beat eggs with milk, salt and pepper. Melt butter in sauté pan over medium heat. Add egg mixture and cook stirring constantly until just starting to firm up. Move pan on and off heat if needed to keep eggs cooking, but not allowing them to overcook. When the eggs are still quite liquid and undercooked, spoon them into the molds and spread out evenly. Carefully pour hot water into baking dish to a depth of ½ inch. Cover molds and dish with a sheet of foil and allow to steam for 3-5 minutes. Check that the eggs are your desired doneness and not overcooked. The eggs should hold their shape and pull away from the sides of the mold in one piece. Turn a plate over and place on top of one of the molds. Invert both the plate and the mold in one motion and carefully remove the foil. Use a teaspoon to help separate if necessary. Garnish the brain with ketchup to mimic blood.

Pizza dough from a can, stuffed with HoneyBaked Ham, cheese, and Honey Mustard Mayo, then formed into the snake shape. Paint the outside with food color and bake. The tounge is a roasted red pepper from the door of my fridge. The kids had it before they went trick-or-treating. Big Hit.
